Juan Urcia named Executive Pastry Chef
TUNICA, MS – September 2006 – Harrah’s Entertainment welcomes back Juan Urcia as executive pastry chef for Grand Casino Resort. Urcia is responsible for the operations of the pastry department for banquet functions, restaurant functions, storeroom requisitions, daily production sheets, consistency of plate presentations, product specification and standardized recipes. “Juan has a passion for his art that is readily evident in everything he creates,” says Bob Schweitzer, Vice President of Food and Beverage for Grand Casino Resort. “The detail and beauty in is work is matched only by its incredible taste.” Urcia brings more than 18 years pastry experience to the Grand Casino Resort, including three years as the executive pastry chef for Grand Casino from 2001 to 2004. Prior to his recent return to Harrah’s Entertainment, Urcia was the pastry chef for the Hollywood Casino.
