TUNICA, MS – June 2006—Horseshoe’s very own John Besh was awarded the nation’s top honor for culinary professionals, the James Beard Award of Best Chef for the Southeast Region. The awards recognize culinary excellence in 62 categories, including cookbooks, restaurants, chefs, broadcasting, print journalism, and restaurant design. The awards are judged by over 600 industry professionals who are assigned to judge specific award categories based on their expertise. John Besh has served as the Executive Consulting Chef at Horseshoe’s one of a kind N’awlins restaurant since its opening in December 2004. N’awlins is known for its authentic Creole and Cajun cuisine, a cuisine that Besh has mastered and molded into his own style. Besh has brought his love for Louisiana’s rich culinary traditions to Tunica with his exceptional creations, such as Crabmeat Ravigote, Louisiana Shrimp with Andouille and Cheese Grits, Gumbo Ya-Ya and Bourbon Vanilla Crème Brulée. Besh’s extensive knowledge and training have earned him countless accolades throughout his career and especially at his premier New Orleans restaurant, Restaurant August. In 2002, Besh earned a spot on Conde Nast Traveler’s list of “Hot Tables,” a ‘nod’ in Gourmet magazine’s May 2002 edition as one of New Orleans best restaurants, and praises from the New York Times for Restaurant August and his innovative menu. These well-deserved awards have prepared John Besh for the undisputable top honor of the James Beard Best Chef Award. His dedication to his work is clearly illustrated by his desire to continue the development of his own cooking, as well as the techniques of others. He visits France annually as a chef consultant, training fellow chefs in the fine points of Louisiana cuisine. His expertise in both classical cooking styles, as well as his native cuisine has proven him worthy of such a celebrated honor.
